This Italian beef is tender and filled with savory flavors, perfect for sandwiches or served over vegetables. It’s incredibly easy to make and will fill your home with an irresistible aroma!
Ingredients
- 2 lbs beef chuck roast
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth (ensure it’s Whole30 compliant)
- 1/2 cup red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- Optional: Sliced peppers (such as bell peppers) for serving
Cooking Instructions
- Place the beef chuck roast in the slow cooker.
- Add the sliced onion and minced garlic on top of the meat.
- In a mixing bowl, combine the beef broth, red wine vinegar, oregano, basil, garlic powder, onion powder, salt, and pepper. Whisk together and pour over the beef.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender and easily pulls apart.
- Before serving, shred the beef in the slow cooker using two forks and mix it with the juices.
- If desired, serve with sliced peppers for extra flavor and texture.
