Instructions
- 1
Preheat your oven to 350°F (175°C). Grease and flour (using almond flour) two 8-inch round cake pans.
- 2
In a large mixing bowl, whisk together the almond flour, cocoa powder, baking soda, and salt.
- 3
In another bowl, beat together the eggs, applesauce, maple syrup, and vanilla extract until smooth.
- 4
Gradually add the wet ingredients to the dry ingredients, mixing until combined and smooth.
- 5
Divide the batter evenly between the two prepared cake pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- 6
While the cakes are cooling, prepare the sour fruit glaze. In a saucepan, combine the frozen berries and maple syrup. Cook on medium heat until the berries break down, about 5-7 minutes. Stir in the lemon juice and then remove from heat. Allow to cool.
- 7
Once cool, layer the first cake with a portion of the sour fruit glaze, then top with the second cake.
- 8
Pour the remaining glaze over the top of the cake and allow it to drip down the sides.
- 9
Decorate the top of the cake with crushed Sour Patch Kids.
This decadent layer cake features a rich chocolate base, adorned with a tangy sour fruit glaze and delightful Sour Patch Kids for a unique and playful decoration.
