Ingredients
- 1 medium spaghetti squash
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color you prefer)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup corn (fresh, frozen, or canned)
- 1 teaspoon Italian seasoning
- 1 teaspoon chili powder (optional for a bit of heat)
- Salt and pepper, to taste
- 1 ½ cups shredded cheddar cheese (or your favorite cheese)
- Fresh basil or parsley, chopped (for garnish)
Cooking Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the inside with a bit of olive oil and sprinkle with salt and pepper. Place cut-side down on a baking sheet and roast for about 30-40 minutes, or until tender.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add in the ground beef, cooking until browned. Drain any excess fat if necessary.
- Stir in the diced bell pepper, drained diced tomatoes, corn, Italian seasoning, chili powder (if using), salt, and pepper. Allow it to simmer for 5-7 minutes, mixing everything thoroughly.
- Remove the roasted spaghetti squash from the oven. Using a fork, scrape out the flesh into strands and add it to the skillet, mixing well with the meat and vegetable mixture.
- Transfer the mixture into a greased baking dish and top it with shredded cheddar cheese.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil or parsley before serving.
