- Rinse long grain rice under cold water until the water runs clear. In a pot, combine rice and 2 cups of water (or broth), bring to a boil, then reduce heat to low. Cover and simmer for about 15-18 minutes, or until the water is absorbed and the rice is fluffy.

- In a large pan, heat olive oil over medium heat. Add the chopped onions and sauté until translucent.
- Add minced garlic and cook for another minute.

- Add about 2 cups of water, bring to a boil, then cover and reduce heat to a gentle simmer. Cook for about 20-25 minutes, or until the potatoes are tender and the sauce thickens. Stir occasionally, adding more water if needed.
