Spicy Black Bean Pasta

This delicious pasta dish is packed with flavor, thanks to the addition of black beans and a few spicy spices.
Ingredients
- 1 pound pasta
- 1 tablespoon olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 1 can black beans, drained and rinsed
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- Salt and black pepper, to taste
- 1/2 cup grated cheddar cheese
- Fresh cilantro, chopped, for garnish
Instructions
- Cook the pasta according to the package directions. Reserve 1 cup of the pasta cooking water before draining the pasta.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the black beans, cumin, chili powder, cayenne pepper, salt, black pepper, and 1/2 cup of the reserved pasta cooking water to the skillet. Cook for 5 minutes, or until heated through and slightly thickened.
- Add the cooked pasta to the skillet and toss to combine. Top with the grated cheddar cheese and fresh cilantro.
Cheesy Baked Pasta
This creamy and cheesy pasta dish is a perfect comfort food. It's great for leftovers too!
Ingredients
- 1 pound pasta
- 4 tablespoons butter
- 4 tablespoons flour
- 3 cups milk
- 2 cups grated cheddar cheese
- Salt and black pepper, to taste
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 can white beans, drained and rinsed
- Fresh parsley, chopped, for garnish
Instructions
- Cook the pasta according to the package directions. Drain and set aside.
- Preheat the oven to 375°F/190°C.
- In a medium saucepan, melt the butter over medium heat. Add the flour and whisk to combine. Cook for 1-2 minutes.
- Gradually whisk in the milk, making sure there are no lumps. Cook until the sauce has thickened, about 5-7 minutes.
- Add the grated cheddar cheese, salt, black pepper, Italian seasoning, smoked paprika, cayenne pepper, and white beans to the sauce. Stir to combine.
- Add the cooked pasta to the sauce and stir until the pasta is coated.
- Transfer everything into a baking dish and top with more grated cheddar cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with freshly chopped parsley.
