Spicy Corn Chowder with Potatoes Kale and Zucchini

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups potatoes, peeled and diced
- 1 medium zucchini, diced
- 4 cups vegetable broth (or chicken broth for non-vegans)
- 2 cups corn kernels (fresh or frozen)
- 2 cups kale, stems removed and chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 cup milk (use dairy or a plant-based milk of your choice)
- Fresh cilantro or parsley for garnish (optional)
- Juice of 1 lime (optional for brightness)
Cooking Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute, being careful not to let it burn.
- Add the diced potatoes and zucchini to the pot and pour in the vegetable broth. Bring the mixture to a boil, then lower the heat and let it simmer until the potatoes are tender, about 10-15 minutes.
- Stir in the corn kernels, kale, smoked paprika, cayenne pepper, salt, and pepper. Simmer for another 5-7 minutes until the kale is wilted and the zucchini is tender.
- Add the milk to the pot and heat through, making sure not to boil. Taste and adjust the seasoning as necessary. If you'd like, a splash of lime juice can add a nice brightness.
