Spicy Creamy Stovetop Mac and Cheese

This version of stovetop mac and cheese is for those who love spice! The combination of cheddar cheese with the heat from the spices is a match made in heaven.
Ingredients
- 1 pound elbow macaroni
- 4 tablespoons unsalted butter
- 4 tablespoons flour
- 2 cups whole milk
- 2 cups shredded cheddar cheese
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper
- Optional toppings: chopped jalapenos, hot sauce, green onions
Instructions
- Cook the macaroni according to package instructions until it's al dente. Drain the pasta and set it aside.
- To prepare the cheese sauce, melt the butter in a large saucepan over medium heat. Add the flour and whisk until the mixture turns light brown.
- Add the milk and continue whisking until it starts to simmer and thicken.
- Mix in the cheddar cheese and parmesan cheese until they are melted and the mixture is smooth.
- Add the cayenne pepper, smoked paprika, salt, and pepper to the cheese sauce and stir well.
- Add the cooked macaroni to the sauce and mix until well combined.
- Serve hot and top with chopped jalapenos, hot sauce, or green onions if desired!
