- 2 cups cooked rice (preferably day-old)
- 2 large eggs
- 1 cup mushrooms, sliced (shiitake or button mushrooms are great)
- 1 green pepper, chopped
- 1-2 fresh chilis, finely chopped (adjust based on your spice preference)
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 tablespoons sesame oil (or vegetable oil)
- 2 green onions, chopped (for garnish)
- Salt and pepper to taste
Cooking Instructions:
- Heat a large skillet or wok over medium heat and add 1 tablespoon of sesame oil.
- Add the sliced mushrooms and green pepper to the skillet. Sauté for about 3-4 minutes, until they start to soften.
- Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the cooked rice to the skillet, breaking up any clumps.
