Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 cup frozen mixed vegetables (or fresh if you have them)
- 1 cup uncooked pasta (like elbow macaroni or penne)
- 1 cup beef broth or water
- 1 cup shredded cheese (cheddar works beautifully)
- 1-2 tablespoons Texas Pete hot sauce (adjust to your taste)
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions:
- Preheat your oven to 350°F (175°C).
- Sauté the diced onion and minced garlic in a large skillet over medium heat with olive oil until softened (about 3-4 minutes).
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, seasoning with salt, pepper, oregano, and paprika.
- Stir in the diced tomatoes (with juices), mixed vegetables, and hot sauce for that spicy zing. Mix thoroughly, then add the uncooked pasta and beef broth. Let it simmer for about 5 minutes.
- Transfer the mixture to a greased baking dish. Sprinkle the shredded cheese evenly over the top.
- Cover with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
