Spicy Pepper Melt Sandwich

Ingredients:
- Pickled and fried bell and jalapeno pepper slices (your special ingredient)
- 4 slices of your favorite bread (white, whole wheat, or sourdough)
- 4-6 slices of deli-style turkey or chicken
- 4 slices of pepper jack cheese
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 tablespoon honey
- 1 tablespoon unsalted butter
Instructions:
- In a small bowl, combine mayonnaise, Dijon mustard, and honey. Mix well to create a spread.
- Lay out the slices of bread on a clean work surface. Spread the mayonnaise mixture onto one side of each slice.
- On two slices of bread, layer the deli-style turkey or chicken, followed by the pickled and fried bell and jalapeno pepper slices, and top with a slice of pepper jack cheese.
- Place the remaining two slices of bread on top to make sandwiches, with the mayonnaise side facing inward.
- Heat a large skillet or pan over medium heat. Add the butter and allow it to melt.
- Carefully place the sandwiches onto the skillet or pan. Cook for about 3-4 minutes on each side, or until the bread turns golden brown and the cheese starts to melt.
- Once the sandwiches are cooked, remove them from the skillet or pan and let them cool for a minute.
- Cut each sandwich in half diagonally or into quarters for easier handling and serving.
