Spicy Tomato Soup with Jalapeos Vegan

This soup recipe offers a classic comfort food with a spicy kick, and is completely plant-based!
Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 jalapeños, seeded and minced
- 28 oz canned whole tomatoes in juice
- 2 tbsp tomato paste
- 1/2 tsp cumin
- 2 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 teaspoon cane sugar
- 1 1/2 cups vegetable broth
- 3/4 cup unsweetened plant-based milk, such as soy or almond milk
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onions, garlic, and jalapeños, then sauté until the onions become translucent.
- Add the canned tomatoes (including the juice), tomato paste, cumin, basil, salt, black pepper, sugar, and vegetable broth to the pot. Bring to a boil, then lower heat and allow to simmer, covered, for 30 minutes.
- Remove from heat and puree the mixture in a blender or using an immersion blender.
- Return the soup to the pot and add the plant-based milk. Heat gently until warmed through, then serve.
