Square Zeppoli A Playful Twist on a Classic

Let’s create a fun version of zeppoli that takes on a square shape! It will maintain that delightful flavor while giving it a little twist in presentation.
Ingredients:
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1 teaspoon salt
- 4 large eggs
- Vegetable oil (for frying)
- Sugar (for dusting)
- Optional: vanilla extract, chocolate sauce, or honey for drizzling
Instructions:
- In a medium saucepan, bring the water and butter to a boil over medium heat.
- Add the flour and salt all at once, stirring quickly until the mixture forms a ball and pulls away from the sides of the pan. This usually takes about 1-2 minutes.
- Remove from heat and let it cool for a minute. Then, add eggs one at a time, mixing well after each addition until smooth. You can also stir in a teaspoon of vanilla extract if you'd like.
- Instead of dropping spoonfuls into the oil, transfer the dough to a piping bag with a large square tip (or you can use a plastic bag with a corner snipped off) to pipe the dough directly into the hot oil in a square or rectangular shape.
- Heat vegetable oil in a deep pot to about 350°F (175°C).
- Pipe squares of dough into the hot oil. Fry in batches, being careful not to overcrowd the pot. Cook until golden brown, about 2-3 minutes on each side, turning occasionally.
- Remove with a slotted spoon and drain on paper towels.
- While still warm, dust with sugar or drizzle with chocolate sauce or honey if you wish!
