SugarFree Berry and Chia Seed Pudding Recipe optional honey

Serve 2-3 people
Ingredients:
- ½ cup unsweetened almond milk
- ½ cup fresh strawberries, sliced
- ½ cup fresh blueberries
- 1/3 cup chia seeds
- 1 tsp vanilla extract
- 1-2 tbsp honey (optional)
- 1 tsp grated lemon zest
- A pinch of salt
- A handful of fresh mint leaves
Directions:
- In a mixing bowl, pour in the unsweetened almond milk and chia seeds. Whisk until there are no lumps. Then, add honey (optional), vanilla extract, grated lemon zest, and salt into the mixture. Mix again until everything is combined.
- Let the mixture sit in the refrigerator for 30 minutes. Then, cover the bowl and leave it in the fridge for at least 1 hour, ideally overnight, to allow the chia seeds to soak up the mixture and form a pudding-like consistency.
- In a separate mixing bowl, add fresh strawberries and blueberries. Crush them slightly with a fork or a potato masher to release their juice. Set aside.
- Once the pudding mixture is ready, give it a good stir to break up any lumps that may have formed overnight. Portion the pudding mixture into serving bowls.
- Spoon the crushed berries over the pudding mixture.
- Garnish with fresh mint leaves and serve!
This Berry and Chia Seed Pudding recipe is low in calories, loaded with fiber, and packed with healthy omega-3s thanks to the chia seeds. If you prefer the pudding to be a little sweeter, feel free to add in 1-2 tablespoons of honey, or drizzle some honey on top of the finished pudding. Enjoy!
