Summer Grilled Peach Caprese Salad Recipe

Ingredients:
- 4 medium-sized peaches, cut into wedges
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 8 ounces fresh mozzarella, sliced
- 1/2 cup fresh basil leaves, torn into pieces
- 2 cups baby arugula
For the dressing:
- 1/4 cup balsamic vinegar
- 1/4 cup extra-virgin olive oil
- 1 garlic clove, minced
- Salt and freshly ground black pepper, to taste
Instructions:
- Preheat your grill or grill pan over medium-high heat.
- In a large bowl, toss the peach wedges with 1 tablespoon of olive oil. Season with salt and freshly ground black pepper.
- Grill the peach wedges for 1-2 minutes on each side, or until they are slightly charred and caramelized. Remove from heat and let cool slightly.
- On a large platter, arrange the arugula, slices of mozzarella, and the grilled peach wedges.
- To make the dressing, whisk together the balsamic vinegar, extra-virgin olive oil, minced garlic, salt, and freshly ground black pepper in a small bowl.
- Drizzle the dressing over the salad and top with the torn basil leaves.
