Ingredients
- 2 cups shredded cooked chicken
- 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 1 cup chicken broth
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup spinach leaves (fresh or frozen)
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (adjust to your taste!)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Grated Parmesan cheese for serving (optional)
- Fresh basil for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes until it's translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sun-dried tomatoes and cook for 2-3 minutes, allowing their flavors to infuse the oil.
- Pour in the chicken broth and bring to a gentle simmer.
- Add the shredded chicken, spinach, Italian seasoning, red pepper flakes, salt, and black pepper. Stir until everything is well combined and the spinach is wilted.
- Let it cook for an additional 5 minutes to heat everything through.
- Taste and adjust seasoning if necessary.
- Serve hot, topped with grated Parmesan cheese and fresh basil if desired.
