Sweet Coke Rice Cakes

These rice cakes get their sweetness from the addition of Coca-Cola. It may sound strange, but the sugar and carbonation in the soda creates a unique flavor that pairs well with the glutinous texture of the rice cake.
Ingredients
- 1 cup sweet rice flour
- 1/4 cup granulated sugar
- 1/2 cup Coca-Cola
- 1/4 cup water
- Cooking spray
Instructions
- In a mixing bowl, add sweet rice flour and sugar, and stir to combine.
- Slowly pour in Coca-Cola and water, stirring constantly, until the batter is smooth and free of lumps.
- Spray a silicone rice cake mold with cooking spray, and pour batter in until each mold is about 2/3 full.
- Fill a pot with 2 inches of water and bring to a boil.
- Steam rice cakes for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow the rice cakes to cool slightly before removing them from the mold, and serve warm or at room temperature.
These rice cakes will have a chewy, mochi-like texture with a lightly sweet flavor from the Coca-Cola. If you're feeling adventurous, try experimenting with different types of soda to see what unique flavors you can come up with. Enjoy!
