Sweet Potato and Black Bean Quesadilla

This quesadilla is rich in fiber, protein and complex carbs. The recipe requires minimal cooking and is easy to prepare.
Ingredients
- 1 sweet potato, peeled and grated
- 1 can black beans, drained and rinsed
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
- 2 large tortillas
- 1/4 cup shredded cheddar cheese
- Salsa, for serving
Instructions
- Combine the grated sweet potato, black beans, cumin, chili powder, salt, and pepper in a bowl.
- Heat a large skillet over medium to high heat.
- Place 1 tortilla in the skillet and sprinkle 1/2 of the shredded cheese over half of the tortilla.
- Spoon half of the sweet potato and black bean mixture over the cheese. Fold the other half of the tortilla over the mixture.
- Cook the quesadilla for 2-3 minutes on each side or until golden brown and the cheese is melted.
- Repeat with the second tortilla and filling.
- Cut each quesadilla into 4 pieces and serve with salsa.
