Sweet Potato and Chicken Bake

This heartwarming dish brings together tender chicken and sweet potatoes, roasted to perfection with seasonal herbs, while vibrant peas and sweetcorn add extra nourishment. It’s simple, nourishing, and filled with love!
Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 2 chicken breasts, cut into chunks
- 2 celery stalks, chopped
- 2 bell peppers, chopped (any color you fancy)
- 1 cup frozen peas
- 1 cup canned sweetcorn, drained
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Cooking Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss the cubed sweet potatoes, chicken pieces, celery, bell peppers, frozen peas, and sweetcorn with olive oil, garlic powder, paprika, thyme, salt, and pepper until everything is well coated.
- Spread the mixture evenly on a large baking sheet.
- Roast in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender, stirring halfway through for even cooking. Make sure to toss gently after about 15 minutes to incorporate the peas and corn!
