Sweet Potato and Ground Beef Chili with Cabbage

Ingredients
- 1 pound ground beef
- 1 medium sweet potato, peeled and diced
- 1 cup cabbage, chopped
- 1 can (15 oz) dark kidney beans, drained and rinsed
- 1 can (14 oz) diced tomatoes (with juice)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder (adjust to taste)
- 1 teaspoon cumin
- Salt and black pepper to taste
- 2 cups beef broth (or water)
- Olive oil for cooking
- Optional toppings: Sour cream, shredded cheese, chopped cilantro, or green onions
Instructions
- In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the diced onion and garlic and sauté until fragrant and translucent, about 3-4 minutes.
- Add the ground beef to the pot, cooking until browned. Drain excess fat if necessary.
- Stir in the diced sweet potato, chopped cabbage, chili powder, cumin, salt, and black pepper. Cook for about 5 minutes to soften the vegetables slightly.
- Add the diced tomatoes (with juice) and kidney beans to the pot. Pour in the beef broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the sweet potatoes are tender and flavors are well combined, stirring occasionally.
- Taste and adjust seasonings if needed before serving. Top with your favorite toppings like sour cream or shredded cheese if desired.
