Ingredients:
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 1 medium zucchini, julienned
- 1 large carrot, julienned
- 1 cup broccoli florets
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 2 tablespoons soy sauce
- Salt and pepper to taste
- 4 large tortillas
- Tahini sauce (store-bought or homemade)
- 1 tomato, sliced
- 1 avocado, sliced
- Shredded cheese of your choice (such as cheddar or mozzarella)
- Fresh herbs (cilantro, parsley) for garnish
Instructions:
- In a large skillet, heat olive oil over medium heat. Add sliced onion and sauté until translucent.
- Add garlic, zucchini, carrots, broccoli, and mushrooms to the skillet. Cook until the vegetables are tender but still slightly crisp.
- Sprinkle garlic powder, onion powder, smoked paprika, soy sauce, salt, and pepper over the vegetables. Stir to combine and cook for an additional 2-3 minutes.

- Cut the wraps in half diagonally and serve.
