Ingredients:
- 500g chicken (boneless, cut into cubes)
- 3 large tomatoes (pureed)
- 1 large onion (finely chopped)
- 2 cloves garlic (minced)
- 1-inch piece ginger (grated)
- 2 green chilies (slit, adjust for heat)
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp coriander powder
- Salt (to taste)
- Fresh coriander leaves (for garnish)
- 1-2 tbsp oil (use a small amount for sautéing)
- Water (as required)
Cooking Instructions:
- Heat the oil in a large pan over medium heat. Once hot, add the cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and slit green chilies. Sauté for 1-2 minutes until fragrant.
- Now, add the pureed tomatoes and cook until the mixture thickens and the oil starts to separate (about 5-7 minutes).
- Add the turmeric powder, coriander powder, and salt, stirring well to combine.
- Add the chicken cubes to the pan, mixing well to coat them with the tomato spice mixture. Cook for about 5 minutes.
- Pour in enough water to cover the chicken, bring to a simmer, then cover and cook on low heat for 15-20 minutes, or until the chicken is cooked through and tender.
- Stir in the garam masala and let it simmer for an additional 2 minutes.
- Garnish with freshly chopped coriander leaves before serving.
