- 1 cup milk

- 1 teaspoon vanilla extract

Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; lumps are okay!
- Heat a skillet or griddle over medium heat and add a little butter.
- Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter, adding more butter to the skillet as needed.
- Serve warm with maple syrup and optional toppings like fresh fruit or whipped cream.
