Traditional Russian Okroshka

Ingredients:
- 2 cups kefir (Russian yogurt drink)
- 2 cups cold water
- 3 medium potatoes, boiled and diced
- 1 cucumber, diced
- 4 hard-boiled eggs, chopped
- 1/2 cup radishes, thinly sliced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 2 green onions, thinly sliced
- Salt and pepper to taste
- Ice cubes (optional)
Instructions:
- In a large bowl, mix the kefir and cold water until well combined.
- Add the diced potatoes, cucumber, hard-boiled eggs, radishes, dill, parsley, and green onions to the bowl.
- Gently stir all the ingredients together.
- Season with salt and pepper to taste.
- Refrigerate the Okroshka for at least 1 hour to chill.
- Serve the Okroshka cold, optionally with ice cubes for extra chilliness.
