Tuna Oat and Raisin Cookies

These delightful cookies aren't your ordinary oatmeal raisin cookies - no, they're better! Not only do they have the delicious flavors of oatmeal and raisins, but they also feature a healthy dose of canned tuna. Sounds unusual, right? But trust us, these cookies are a real catch!
Ingredients
- 1/2 cup canned tuna, drained
- 1/2 cup rolled oats
- 1/2 cup raisins
- 1/2 cup all-purpose flour
- 1/2 cup unsalted butter, at room temperaturee
- 1/4 cup granulated sugar
- 1/4 cup firmly packed brown sugar
- 1 tablespoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Begin by preheating the oven to 350°F (175°C).
- Drain the canned tuna from its liquid and flake it apart using a fork.
- In a mixing bowl, combine the flaked canned tuna, rolled oats, raisins, and all-purpose flour.
- In a separate mixing bowl, cream together the unsalted butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
- Add the baking soda, baking powder, and pinch of salt to the creamed mixture.
- Add the dry ingredients to the mixture slowly, beating until you have a smooth dough.
- Roll the dough into balls and place them on a baking sheet.
- Leave about 2 inches between each ball, as they will spread as they cook.
- Bake in the preheated oven for 10-15 minutes, or until light golden brown.
- Remove from the oven and let cool before serving.
Origin story -
This recipe was accidentally invented by a fisherman's wife who was trying to find a creative way to use up the large amount of canned tuna that her husband had brought home. Wanting to bake him a treat, she combined the tuna with some oatmeal raisin cookie dough, and voila! The first tuna, oat, and raisin cookies were born. At first, her husband was skeptical of the unusual cookies, but after one bite, he was hooked! Now, this recipe is a favorite among fishermen and their families, who love the unique flavor and the added boost of protein from the tuna.
