Turkey and Cherry Tomato Pasta with Garlic and Olive Oil

Ingredients
- 8 ounces (225g) turkey breast, cut into bite-sized pieces
- 8 ounces (225g) cherry tomatoes, halved
- 4 cloves of garlic, minced
- 1/4 cup (60ml) olive oil
- 1 tablespoon (15ml) tomato paste
- 1/2 teaspoon red pepper flakes (adjust to your spice preference)
- Salt and black pepper, to taste
- 8 ounces (225g) pasta of your choice
- Fresh basil leaves, for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes and sauté for about 1 minute, until fragrant.
- Add the turkey breast pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add the cherry tomatoes to the skillet and cook for an additional 2-3 minutes, until they start to soften and release their juices.
- Stir in the tomato paste and continue to cook for another 2 minutes, allowing the flavors to meld together.
- Season with salt and black pepper to taste.
- Add the cooked pasta to the skillet and toss well to coat the pasta with the sauce.
- Cook for an additional 2-3 minutes, allowing the pasta to absorb some of the flavors from the sauce.
- Serve the Turkey and Cherry Tomato Pasta with a garnish of fresh basil leaves.
