Vanilla Date Muffins

Ingredients:
- 240g pastry or cake flour
- 200g white sugar
- 10g baking powder
- 5g baking soda
- 3g salt
- 113g unsalted butter, melted
- 240ml milk
- 2 large eggs
- 10ml vanilla extract
- 150g chopped dates
Instructions:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix, as this can make the muffins dense.
- Gently fold in the chopped dates, distributing them evenly throughout the batter.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for approximately 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and let them cool in the tin for 5 minutes, before transferring them to a wire rack to cool completely.
These Vanilla Date Muffins have a lovely soft and moist texture, and the addition of baking soda will help them rise and become fluffy. Enjoy!
