- 2 ripe bananas, mashed
- 1/2 cup unsweetened applesauce
- 1/3 cup maple syrup or agave nectar
- 1 teaspoon vanilla extract
- 1 cup rolled oats (blended into flour)
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon (optional)
- 1/2 cup chopped walnuts or pecans (optional)
- 1 cup almond milk (or any plant-based milk)
Cooking Instructions
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
- In a large bowl, combine the mashed bananas, applesauce, maple syrup, and vanilla extract, mixing well until smooth.
- In a separate bowl, blend the rolled oats into a flour consistency using a blender or food processor.
- In the bowl with the wet mixture, add the oat flour, all-purpose flour, baking soda, salt, and cinnamon (if using). Stir gently until just combined.
- Gradually pour in the almond milk, mixing until the batter is smooth. Be careful not to over-mix.
- If you’d like, fold in the chopped nuts for added texture and flavor.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
