Vegan Chickpea Flour Omelette

This omelette is vegan, low in calories, and high in protein!
Ingredients:
- 1/2 cup chickpea flour
- 1/2 cup water
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/8 tsp turmeric
- 1/8 tsp paprika
- 1/8 tsp black pepper
- 1/4 cup chopped vegetables (onion, bell pepper, spinach)
- Non-stick cooking spray
Instructions:
- In a bowl, whisk together the chickpea flour, water, baking powder, salt, turmeric, paprika, and black pepper until combined.
- Let the batter sit for 5 minutes.
- Lightly coat a non-stick skillet with cooking spray and heat over medium heat.
- Pour half of the batter into the skillet, and then add half of the chopped vegetables.
- Cook the omelette for about 3-4 minutes or until the edges begin to pull away from the pan.
- Carefully flip the omelette, and then cook on the other side for 1-2 minutes.
- Remove from heat, and repeat the process with the remaining batter and vegetables.
