Vegan Citrus Shortbread Cookies

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 teaspoon salt
- Zest of 1 lemon or orange (whichever you prefer)
- 1/2 cup vegan butter, softened
- 1 tablespoon freshly squeezed lemon or orange juice
- Extra powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a medium-sized bowl, whisk together the all-purpose flour, powdered sugar, salt, and citrus zest until well combined.
- Add the softened vegan butter and freshly squeezed citrus juice to the dry ingredients. Use a fork or your hands to mix everything together until a crumbly dough forms.
- Transfer the dough onto a clean surface and gently knead it a few times to bring it together into a smooth ball.
- Roll out the dough to about 1/4 inch thickness using a rolling pin. If the dough is sticking, you can lightly dust the surface and rolling pin with flour.
- Cut out desired shapes using cookie cutters and carefully transfer them to the prepared baking sheet, leaving a little space between each cookie.
- Bake the cookies in the preheated oven for about 12-15 minutes, or until the edges are lightly golden brown.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely.
- Optional: Dust the cooled cookies with powdered sugar for an extra touch of sweetness.
