Vegan Kale Chickpea Stirfry

Ingredients:
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 onion, sliced
- 1 can chickpeas, drained and rinsed
- 1 bag of chopped frozen kale
- Salt and pepper to taste
- Cooked rice, for serving (optional)
Instructions:

In a small bowl, whisk together olive oil, soy sauce, rice vinegar, minced garlic, and minced ginger. Set aside.

In a large pan, heat up some oil to medium-high heat. Add sliced onion and sauté until softened, for about 4-5 minutes.

Add the canned chickpeas, and cook for another 3-5 minutes.

Add the frozen kale and sauce mixture to the pan and stir-fry for about 5-10 minutes until the kale is cooked through and tender.

Season with salt and pepper to taste.

Remove from heat, let it cool, and serve with cooked rice (if desired).
