Vegan Kale White Bean Soup

Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup water
- 1/2 cup uncooked rice
- 1 can of white beans, drained and rinsed
- 1 bag of chopped frozen kale
- Salt and pepper to taste
Instructions:

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.

Add minced garlic and sauté for another 30 seconds.

Pour in the vegetable broth and water. Bring the mixture to a boil and add in rice. Reduce the heat, cover and let simmer for about 15 minutes until the rice is tender.

Once the rice is cooked, add the white beans, the frozen kale and a pinch of salt and pepper. Stir well.

Let the soup simmer on medium-low for about 10 minutes until the kale is tender. Taste and adjust seasoning with additional salt and pepper, if needed.

Turn off the heat and let the soup cool for a few minutes. Transfer to serving bowls and enjoy your Vegan Kale & White Bean Soup!
