Vegan Tofu Scramble

Ingredients:
- 1 block of frozen silken tofu
- 1 tablespoon of olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 1 garlic clove, minced
- 1 tablespoon of nutritional yeast
- 1/4 teaspoon of turmeric
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions:
- Remove the frozen silken tofu from the freezer and thaw it in the refrigerator for at least 12 hours.
- Once the tofu is thawed, drain the excess water and crumble the tofu into small pieces.
- Heat the olive oil in a large pan over medium heat.
- Add the onion, bell pepper, and garlic to the pan and sauté until the vegetables are tender.
- Add the crumbled tofu to the pan, along with the nutritional yeast, turmeric, salt, and black pepper.
- Stir everything together and cook for 5-7 minutes until the tofu is heated through and slightly golden.
- Garnish with fresh parsley and serve hot.
Flavor profile:
This vegan tofu scramble is a great alternative to scrambled eggs. The nutritional yeast adds a cheesy and savory flavor, while the turmeric gives it a bright yellow color. You can adjust the seasoning to your taste, adding more or less salt and pepper as needed.
