Vegetable and Egg Breakfast Wrap with Sausages

Backstory

Ingredients
- 2 large eggs
- ½ cup frozen mixed peppers
- ½ cup frozen spinach
- ¼ cup frozen peas
- 1-2 frozen sausages (cooked and sliced)
- 1 tablespoon Greek yogurt
- 1 tortilla wrap
- Salt and pepper, to taste
- ¼ teaspoon paprika (or your favorite herbs/spices)
- Olive oil or butter (for cooking)
Cooking Instructions
- In a non-stick skillet, heat a little olive oil or butter over medium heat.
- Add the frozen mixed peppers, spinach, and peas to the skillet. Sauté until the veggies are heated through and tender, about 3-5 minutes.
- While the vegetables are cooking, crack the eggs into a bowl and beat them until fully combined. Season with salt, pepper, and paprika.
- Push the sautéed vegetables to the side of the skillet and pour the scrambled eggs into the empty space. Cook, gently stirring, until the eggs are set but still creamy, about 2-3 minutes.
- Stir in the sliced frozen sausages, allowing them to warm through.
- Warm the tortilla wrap in another skillet or microwave for a few seconds until pliable.
- Place the vegetable, egg, and sausage mixture onto the tortilla wrap. Top with a tablespoon of Greek yogurt.
- Roll up the tortilla tightly, folding in the sides as you go. Slice in half and enjoy your delightful meal!
