- 1 cup cooked brown or white rice
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth (low-sodium)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 cup green beans, trimmed and cut into small pieces
- 1 cup spinach or kale (fresh or frozen)
- Optional: lemon juice for garnish
Cooking Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Pour in the vegetable broth and bring it to a boil.
- Add the cooked rice, green beans, dried thyme, and parsley. Season with salt and pepper to taste.
