This Vegetarian Chili is packed with flavor and loaded with beans, vegetables, and spices. It’s perfect for a cozy dinner and can be made in one pot, making cleanup a breeze!
Ingredients:
- 2 cans chickpeas, drained and rinsed
- 2 cans black beans, drained and rinsed or 3 cups cooked dry black beans
- 1 can crushed tomatoes
- 1 can diced tomatoes
- 1 can corn, drained
- 1 can mixed veggies, drained (or any other veggies you desire)
- 1 green bell pepper, chopped
- 1 onion, chopped (sweet or green)
- 2-3 cloves minced garlic
- 2-3 jalapenos, chopped (optional for spice)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried oregano
- Salt and pepper to taste
- Olive oil for sautéing
- Vegetable broth (if needed for desired consistency)
- Optional toppings: Avocado, sour cream, cheese, or green onions
Cooking Instructions:

Sauté the Aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
