Zucchini Noodles with Cherry Tomatoes and Basil

Ingredients
- 4 medium zucchinis, spiralized into noodles
- 2 cups cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional for a bit of heat)
- Salt and pepper to taste
- 1/4 cup fresh basil leaves, chopped
- Grated Parmesan cheese (optional for serving)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Add the halved cherry tomatoes to the skillet. Cook for about 3-5 minutes until they start to soften and release their juices.
- Gently toss in the zucchini noodles and cook for another 2-3 minutes until just tender.
- Season with salt and pepper to taste.
- Remove from heat and stir in the fresh basil.
- Serve warm, and sprinkle with grated Parmesan cheese if desired.
