Aloo Gobi is a beloved classic in Indian cuisine, showcasing the vibrant colors and flavors that make vegetarian dishes so wonderful. This dish combines tender potatoes and cauliflower with aromatic spices, creating a harmonious and spicy medley that pairs perfectly with rice or naan.
Ingredients
- 2 medium potatoes, peeled and diced
- 1 small head of cauliflower, cut into florets
- 1 medium onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons oil (vegetable or mustard oil)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt, to taste
- Fresh cilantro, for garnish
- 1-2 green chilies, slit (optional for extra heat)
- 1 teaspoon ginger-garlic paste (optional)
Cooking Instructions
- Heat the oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the chopped onion and sauté until golden brown. If using, add the ginger-garlic paste and green chilies at this stage and sauté for another minute.
- Stir in the diced tomatoes and cook until they soften and release their juices, about 5 minutes.
- Add the turmeric powder, red chili powder, and salt. Mix well and cook for another minute to combine the spices.
- Now, add the diced potatoes and cauliflower florets to the pan. Stir well to coat them in the spice mixture.
- Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the potatoes and cauliflower are tender. If needed, add a splash of water to prevent sticking.
- Once cooked, sprinkle garam masala over the dish and mix gently. Cook for another 2 minutes to let the flavors meld.
- Garnish with fresh cilantro before serving.
