This breakfast treat is a chia seed pudding that you can prepare in minutes and let set overnight. It's versatile and can be topped with your favorite fruits, nuts, or seeds in the morning!
Ingredients
- 1/2 cup chia seeds
- 2 cups plant-based milk (almond, coconut, or soy)
- 2 tablespoons maple syrup or agave nectar (adjust to taste)
- 1 teaspoon vanilla extract (optional)

Instructions
- In a mixing bowl, combine the chia seeds, plant-based milk, maple syrup, and vanilla extract if using.
- Whisk everything together until well combined. Make sure there are no clumps of chia seeds.
- Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and thicken.
