Hearty Homemade Vegetable Broth

Ingredients
- 2 tablespoons olive oil
- 1 large onion, quartered
- 2 carrots, roughly chopped
- 2 celery stalks, roughly chopped
- 4 cloves garlic, smashed
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 teaspoon black peppercorns
- A pinch of turmeric
- 10 cups water
- Salt to taste (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery. Sauté for about 5-7 minutes until they start to soften and become fragrant.
- Stir in the smashed garlic, bay leaves, thyme, parsley, black peppercorns, and turmeric. Cook for an additional 2-3 minutes, stirring frequently.
- Pour in the water, bring the mixture to a boil, then lower the heat and let it simmer for about 45-60 minutes. The longer you simmer, the more flavorful your broth will be.
- Once done, strain the broth through a fine mesh sieve into a large bowl, discarding the solids.
- Taste and adjust the salt if necessary.
