Classic Onion and GarlicFree Poha

Ingredients:
- 1 cup Poha (flattened rice)
- 1 medium Potato, boiled and diced
- 2 tbsp Oil
- 1 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 8-10 Curry Leaves
- 1 Green Chili, chopped (adjust to taste)
- A pinch of Asafoetida (Hing)
- 1/2 tsp Turmeric Powder
- Salt to taste
- 2 tbsp Roasted Peanuts
- Fresh Coriander leaves for garnish
- Lemon wedges for serving
Instructions:
- Rinse the poha in a colander under running water until they soften. Drain well and set aside.
- In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
- Add curry leaves, green chili, and a pinch of asafoetida. Sauté for a minute.
- Add the diced boiled potatoes and turmeric powder. Cook until the potatoes are slightly golden.
- Add the drained poha to the pan. Gently mix everything together.
- Season with salt and stir well. Cook for a few minutes until heated through.
- Add roasted peanuts and mix gently.
- Garnish with fresh coriander leaves.
- Serve hot with lemon wedges on the side for that extra zing!
