Jeera Rice with Caramelized Onions

Classic fragrant rice with a touch of sweetness from caramelized onions.
Ingredients
- 1 cup basmati rice
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1 small onion, thinly sliced
- 1 cinnamon stick
- 2 green cardamom pods
- 4 cloves
- Salt to taste
- Fresh cilantro leaves, for garnish
Instructions

Rinse the basmati rice thoroughly in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain it well.

Heat ghee or oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until fragrant.

Add thinly sliced onions to the pan and cook until they turn golden brown and caramelized. This may take around 10-15 minutes. Stir occasionally to ensure even caramelization.

In the same pan, add the cinnamon stick, cardamom pods, and cloves. Sauté for a minute to release their aromas.

Add the drained basmati rice to the pan and stir gently to coat the rice with the spices and caramelized onions.

Pour 2 cups of water into the pan and season with salt according to your taste. Bring the mixture to a boil.

Reduce the heat to low, cover the pan, and let the rice simmer for about 15-20 minutes, or until all the water is absorbed and the rice is cooked and fluffy.

Once the rice is done, remove the pan from heat and let it rest, covered, for another 5 minutes. This will help the flavors meld together.

Fluff the rice gently with a fork. Garnish with fresh cilantro leaves.
