- 1 cup cooked rice (white, brown, or basmati)
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 bell pepper (red, yellow, or green), diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 cups spinach or kale, chopped
- 4 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley or basil, chopped (for garnish)
- Feta cheese, crumbled (optional, for serving)
Cooking Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 3-4 minutes.
- Add the diced bell pepper and zucchini, cooking for an additional 5 minutes until they start to soften.
- Stir in the cherry tomatoes, spinach, garlic powder, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until the spinach wilts and the tomatoes soften.
- In a separate pot, on low heat, warm the cooked rice. Once warmed through, transfer it to a serving bowl and spread it out evenly.
- Create four small wells in the vegetables in the skillet. Crack an egg into each well and cover the skillet. Cook for about 5-7 minutes, until the eggs reach your desired doneness (scrambled or runny).
- Carefully place the vegetable and egg mixture over the rice in the bowl.
- Garnish with fresh parsley or basil and sprinkle with crumbled feta cheese, if using.
