Microwave Kiwi Mug Muffin

Ingredients:
- 4 tablespoons oat flour
- 2 tablespoons almond flour (or additional oat flour)
- 1 tablespoon maple syrup (or any sweetener of your choice)
- 1/4 teaspoon baking powder
- Pinch of salt
- 2 tablespoons non-dairy milk (such as almond or soy milk)
- 1/2 teaspoon vanilla extract
- 1 kiwi, peeled and diced
- Optional toppings: sliced kiwi, chopped nuts, or a sprinkle of cinnamon
Instructions:
- In a microwave-safe mug, combine the oat flour, almond flour (or additional oat flour), maple syrup, baking powder, and salt. Stir well to combine.
- Add the non-dairy milk and vanilla extract to the mug. Mix until you have a smooth batter.
- Gently fold in the diced kiwi.
- Place the mug in the microwave and cook on high for around 1 minute and 30 seconds to 2 minutes, or until the muffin has risen and set in the center. Cooking time may vary depending on your microwave, so keep an eye on it.
- Carefully remove the mug from the microwave (it will be hot) and let it cool for a minute or two.
