Miyokos Pourable Cheese Mediterranean Vegetable Pasta Bake

Ingredients:
- 12 oz pasta of your choice (penne or fusilli work well)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, sliced
- 2 cups Miyoko's pourable cheese (or any other pourable cheese of your choice)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced bell peppers, zucchini, cherry tomatoes, and olives. Cook for about 5-7 minutes until the vegetables are slightly softened.
- Add minced garlic, dried oregano, salt, and pepper to the skillet. Cook for another 2 minutes until the garlic is fragrant.
- In a large mixing bowl, combine the cooked pasta, sautéed vegetables, and Miyoko's pourable cheese. Mix well to ensure everything is evenly coated.
- Transfer the pasta mixture to the greased baking dish, spreading it out evenly.
- Bake in the preheated oven for 20-25 minutes, or until the top is bubbly and lightly golden.
- Remove from the oven and garnish with fresh basil leaves before serving.
