Ingredients
- 2 cups low-fat cottage cheese (blended until smooth)
- 1/2 cup sugar-free pudding mix (chocolate or vanilla)
- 2 large eggs
Instructions
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan or line the bottom with parchment paper.
- In a blender or food processor, blend the cottage cheese until smooth.
- Add the sugar-free pudding mix and eggs to the blended cottage cheese. Blend until fully combined and creamy.
- Pour the mixture into the prepared springform pan, smoothing out the top.
- Bake in the preheated oven for 25-30 minutes, or until the center is set and slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 30 minutes to prevent cracking.
- Once cooled, refrigerate for at least 2 hours before serving.
