Revitalizing South Indian Lentil Soup

This hearty and nutritious South Indian Lentil Soup is the perfect dish to revitalize your boyfriend after his long journey. Ingredients
- 1 cup split red lentils (masoor dal)
- 2 cups water
- 1 cup chopped mixed vegetables (carrots, peas, beans)
- 1 medium-sized tomato, chopped
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, slit lengthwise (optional, adjust to spice preference)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon asafoetida (hing)
- Salt to taste
- 2 tablespoons ghee or vegetable oil
- Fresh coriander leaves for garnish
Instructions
- Rinse the split red lentils (masoor dal) thoroughly under running water.
- In a large pot, combine the lentils, water, mixed vegetables, chopped tomato, onion, minced garlic, grated ginger, and green chili (if using). Bring it to a boil over medium heat.
- Skim off any foam that forms on the surface and reduce the heat to low. Cover the pot and simmer for about 25-30 minutes until the lentils and vegetables are fully cooked and tender.
- In a separate small pan, heat ghee or vegetable oil over medium heat.
- Add the mustard seeds and cumin seeds. Let them splutter for a few seconds.
- Add the turmeric powder, red chili powder, coriander powder, and asafoetida to the pan. Stir well for a few seconds to release the flavors.
- Pour the tempering mixture into the lentil soup pot and mix well. Season with salt to taste.
- Simmer the soup for another 5 minutes, allowing the flavors to meld together.
- Garnish with freshly chopped coriander leaves.
- Serve the revitalizing South Indian Lentil Soup hot with steamed rice or dosas.
