Light and crispy besan (gram flour) fritters made in an air fryer, packed with vegetables, perfect for a healthy snack that won't spike your blood sugar.
Ingredients
- 1 cup besan (gram flour) (GI: 10-15)
- 1/2 cup finely chopped mixed vegetables (e.g., onions, spinach, cauliflower, bell peppers) (GI varies depending on the vegetable)
- 1 teaspoon cumin seeds (GI: 0)
- 1/2 teaspoon turmeric powder (GI: 0)
- 1/2 teaspoon red chili powder (optional, GI: 0)
- Salt, to taste (GI: 0)
- 1-2 tablespoons water (as needed) (GI: 0)
- Cooking spray or a little olive oil for greasing (GI: 0)
Cooking Instructions
- In a mixing bowl, combine besan, chopped mixed vegetables, cumin seeds, turmeric powder, red chili powder, and salt.
- Add water gradually to form a thick batter. The batter should be thick enough to hold together but still have a spreadable consistency.
- Preheat the air fryer to 350°F (180°C) for about 5 minutes.
- Lightly grease the air fryer basket with cooking spray or olive oil.
- Using a spoon or your hands, drop spoonfuls of the batter into the basket, leaving space between each fritter for airflow.
- Cook the pakoras in the air fryer for 10-15 minutes, flipping them halfway through, until they are golden brown and crispy.
- Once done, remove and serve hot with a side of yogurt or chutney.
