Almond Flour Fettuccine No Xanthan Gum

This homemade almond flour pasta is naturally gluten-free and low-carb, perfect for those managing Type 2 diabetes. It’s easy to make and pairs beautifully with a range of sauces.
Ingredients
- 2 cups almond flour (GI: 10)
- 3 large eggs (GI: 0)
- 1/2 teaspoon salt (GI: 0)
- 1 tablespoon olive oil (GI: 0)
Cooking Instructions
- In a mixing bowl, combine the almond flour and salt.
- In a separate bowl, whisk together the eggs and olive oil until fully blended.
- Pour the egg mixture into the almond flour mixture and mix until a dough forms. If it appears too crumbly, you can add a teaspoon of water at a time until it holds together.
- Knead the dough on a clean surface for about 2-3 minutes until it becomes smooth. You may find it slightly more delicate without the xanthan gum.
- Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature. This resting time will help the dough hydrate and become easier to roll out.
- On a lightly floured surface (using almond flour), roll out the dough to your desired thickness (around 1/8 inch thick).
- Cut the rolled-out dough into fettuccine strips.
- Cook the fettuccine in a pot of boiling salted water for about 2-3 minutes, then drain and serve with your favorite sauce.
