Cassava Oat Bread with Garlic and Chives

This bread is a wonderful blend of the earthy flavors of cassava and oats, enhanced by the aromatic garlic and fresh chives. Perfect as a side or for toasted sandwiches, it’s sure to be a hit!
Ingredients
- 1 cup oat flour (you can blend rolled oats until fine)
- 1 cup cassava flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 tablespoons dried garlic or 2-3 cloves fresh garlic, minced
- 1/4 cup fresh chives, chopped
- 1 cup water (adjust as needed)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large bowl, mix together the oat flour, cassava flour, baking powder, salt, and dried garlic (or minced fresh garlic).
- Stir in the chopped chives.
- In a separate bowl, combine the water, olive oil, and apple cider vinegar.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Adjust the water if necessary—aim for a thick but pourable consistency.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
