Ingredients:
- 6 large flour tortillas (you can use corn tortillas for a gluten-free option)
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 2 cups Miyoko's pourable cheese (or any other pourable cheese of your choice)
- 1 package (12 oz) Impossible ground beef
- 1 can (10 oz) red enchilada sauce
- 1 can (10 oz) green enchilada sauce
- Salt and pepper to taste
- Optional toppings: sliced jalapeños, chopped cilantro, diced tomatoes
